Oatmeal #132: Veggie Muffins I December 2, 2009

I’ve been craving muffins as a meal lately, and I love veggie muffins, so I thought I’d make some! It’s always nice when you can make fun foods into something that’s also nutritious
And since I’ve been staying up so often to run sessions at the lab, motivation to make healthy things is pretty much non-existent, so it’s nice to just throw a frozen muffin into a toaster and serve with yogurt and fruit for a quick lunch! [Lunch because making oatmeal for breakfast is never too much effort!
] Besides, I can’t scarf salads down on a daily basis–vegetables are always more fun in muffins and pastas!
Oh yeah, this recipe is based on all the Morning Glory Muffins I’ve seen around the net! But I don’t have pineapples or anything like that and I wanted to add oatmeal so I ended up with my own version.
Carrot Coconut Goji Oat Muffins
makes 6 huge muffins
1 cup whole wheat flour
0.5 cup quick oats
1 tbsp each of wheat germ & flax
2 tbsp ground pecans or other nuts [optional]
1 tsp baking powder
1 tsp baking soda
0.5 tsp cinnamon
1 tsp ginger
1 packet sweet & low [or sub 1 tbsp sweetener of choice]
0.25 cup brown sugar or sweetener of choice
1 egg
1 tbsp EVOO
0.5 cup milk
~1 cup grated bb carrots
0.5 cup goji berries, soaked in milk
0.25 cup unsweetened coconut
Mix everything and let sit for 3-4 hours.
Bake at 350F for 20-25 mins
It is awesome stuff. Best when it’s heated and served with plain yogurt! I’m planning to bake another variety using zucchini tomorrow morning when I get back from lab! So! Excited! Maybe I’ll bake some coffee muffins for next semester so I can be wired for more overnight sessions at the lab! Whoo! MUFFINSSSS!
And on a side note–2 weeks and 5 days til winter vacation!

At the lab! Second day of torturing people running overnight sessions in a row–keepin’ awakin’ by watching TV and blogging at the same time! I tried to study but it’s all boring me to sleep…
Anyway I haven’t had coconut in my oatmeal for a while now and kind of miss it! So I decided to buy some and look! There it is on the oatmeal!
0.5 cup oats, 0.25 cup water, 0.25 cup milk
1 tbsp wheat germ, 1 tbsp flax
0.5 banana
0.25 cup plain yogurt
bit of cocoa and coffee powder
pumpkin seeds, peanuts, sunflower seeds
1 tsp coconut
Duuuude I love banana oatmeal and all, but after having frozen bananas, I can’t go back to the heated and stirred in version! There’s just something about frozen bananas that’s so awesome. And if you pair it with yogurt, the awesomeness explodes because it just can’t be contained in one tiny little bowl! But a random frozen half of a banana doesn’t look so photogenic so I decided to suck it up and nuked the thing.
And yes…there are a lot of pictures of this one bowl! I can’t resist good lighting dudes. And I also really really did not want to study…
Oh and I should note that mixing cocoa and french vanilla coffee together in the oatmeal makes the best smell ever! It smells like those chinese egg waffle things that I used to be obsessed with when I was a kid. I kid you not!

Oh my god I’m so hungry right now…I don’t bring food with me to the lab because my participants can’t eat so I shouldn’t eat so as not to stress them out…[I feel like I mentioned this before...] And I always have the biggest oatmeal craving that starts around 3 or 4 a.m. and then combines with a growling stomach all the way until 7 frickin’ a.m.!!!!
1 hour and 21 minutes til I can go home and eat!

Breakfast:
First pancake of the year!
- oatmeal (mix of quick oats & organic rolled oats), unsweetened coconut, peanut butter, milk, cinnamon, ground ginger, flax
+ huge Fuji apple.
I wanted to toss the apple in the pancake–but I only had a plastic knife and those aren’t very good at apple cutting–too bad–because cooked apples go really well with pancakes! I’m so tempted to go and buy a real knife…
Jan 8 breakfast:
Mini blueberry bran muffins–nicked from the caf!
+ 1 egg
I’m really digging having muffins for breakfast! But it feels weird not to eat oatmeal everyday–have gotten so used to it ever since I started this blog!
Jan 9 dinner:

Oatmeal #138: Nutty Oats – Part IV + applesauce
- applesauce, sliced &blanched almonds, cinnamon, ground ginger, shredded coconut, PB, flax, milk, quick oats, organic oats
Applesauce in pancakes! I have never tried it–have you? I added the entire mini container–so I managed to get the apple flavor!
Also–I decided to blend two different types of oats together because I’m running out of quick oats [my weapon of choice for microwave pancakes] so I decided to mix it with organic oats–it turned out quite well, actually! I was afraid it might take longer to cook, but it didn’t! And it was much chewier too.
+ spiced chai tea with milk. I haven’t had tea + milk in ages! If I had sugar around as well, it would have been complete!
My very amazing lunch:
Something I haven’t had in a long time [since last year!]–couscous! Ever since the caf introduced it into my life, I have been hooked. Grains = awesome in all forms!
The above contains: couscous, dried apricots, peppers, carrots, beans, tomatoes, raisins, peas, lemon-garlic vinaigrette
Extra large lunch, extra awesome.
Night-time snack:
I believe it was for an all-nighter. Can’t remember if I succeeded in staying up all night or not…I probably didn’t…

Actually…maybe I did stay up all night…
2 more exams + 1 paper left!
So I only need another week of all-nighters and maybe 3 days of sleeping over at the lab, and then I will be writing my last exam and then going HOME!!!
I have been waiting for this since school started!

I’m in major confusion over everything in my orgo textbook. My exam is in two days. Verdict: SCREWED.
And when trouble comes my way, I procrastinate.

The caf served these smoothies on Sunday–which was majorly exciting! Once in a while they’d spoil us like this…
Long story short: I took some of that stuff home for oatmeal!

This week’s oatmeal has been so full of excitement! I haven’t had brown sugar in my oatmeal since…high school? That was how my mom made them!

The lack of sleep is driving me nuts. Not to mention the fact that the chairs at the lab are extremely uncomfortable for sleeping on
It’s at times like these that I wish I was a midget…

It just occurred to me how appropriate it is that I have a Nutty Oats series on the blog the same time of year that I’m about to go nuts from a combination of homesickness and stress…see how hilarious I am?

Kinda refreshing to have a change from the usual routine! I think I’m going to try and have something different for breakfast once every week so I can have oatmeal at the cafeteria XD

All-nighter snacks:
Fruits, pistachios, apple, and coffee.
Only my plan failed and I fell asleep…

Sometimes I get a huge, overflowing bowl of oatmeal, and sometimes I barely get anything! It’s such a mystery–must figure this out!
Massive breakfast part 2:
For some reason I was still hungry?!
Lunch:
<3 Thai rice noodle salad with lime dressing, sesame, and some other stuff. I buy this for lunch every time I can’t eat at the caf! The vegetable salads look so sketchy
Chicken gumbo. I had to dilute it with water since it was so salty D:
Snack:
Pumpkin seeds and almonds! I think it’s the second time I’ve ever had pumpkin seeds–it’s awesome!
And I ate a bunch of this before I took the picture

Scrambled eggs, tomatoes, mushrooms, kidney beans and chickpeas. I wish I had some tortillas…stuff doesn’t fall out so easily~

Surprisingly, I was full on this…and it didn’t really even look like much~weird.

Strawberry yogurt mixed with Greek yogurt, kashi, peanut butter.
I love weekend lunches ’cause that means I get to binge on Greek yogurt!!

Pumpernickel with baba ghanoush and cucs.
Crackers with baba ghanoush.
Tofu, tomatoes, tons of chickpeas, and potato salad with veggies and capers. This was the first time I’ve ever tried them–sad to say I don’t really like them!
Dessert:
Cookie with honeydew.

A very fruity breakfast:
Even my tea was flavored with fruits! It’s basically green tea flavored with pineapple, orange, and passionfruit–was really good! I could taste it

For some reason…I didn’t really like watermelon, cataloupe, and honeydew in my oatmeal…maybe ’cause they weren’t sweet enough? It was kinda bland :\
