Oatmeal #95: Strawberry-Banana Cheesecake August 21, 2008

Tuesday’s breakfast:
WE FINALLY HAD BANANAS IN THE HOUSE! [they're all gone now--hence past tense and sad face:
] You can imagine how exciting that is
Mom also baked some cheesecake the night before, so combine that thought + breakfast and you get another oatmeal experiment!
I think I had about half a slice in there–but that’s plenty once you break it up and mash it into the oatmeal while they’re cooking. And since I already had the cake to flavor the oats, I chopped the banana instead of mashing it like I usually do.
This picture makes it look gross, but it isn’t! I blame the bad weather, which also meant poor lighting!
The cheesecake flavor wasn’t that strong–I had to actively search for its taste–I guess maybe I’ll use the cake as a topping next time?
Other things I added: vanilla extract, almonds, soy milk, cinnamon, mixed grains
Lunch
When I’m home, it’s very rare that I ever have sandwiches for lunch [I know--I'm spoiled rotten!] But that day I guess no one felt like cooking so my brother went to buy McDonalds [for my parents] and Subway [for himself]. I didn’t feel like waiting ’cause I was hungry–so I made a sandwich!
I sliced one piece of thick white bread in half since I had another piece earlier and didn’t feel up to eating three thick slices of bread x_X
Contents: honey ham, roasted turkey, lettuce, apple slices.
Awesome sweet + savory combo! Am definitely recreating this when I go back to school in September!
Wednesday
Eggs!
Only one picture ’cause all the other ones were ugly!
Contents: oats, grains, small egg, corn, banana, soy milk
Plus a cup of raspberry mocha! [the cocoa blend I added was raspberry flavored--but I think a mocha smoothie is definitely in my future!]
Post-run snack:
Milk, cheerios, bran flakes, raw brownie.
The brownies turned the milk into chocolate milk! Awesome
Dinner:
SUSHIIII! ZOMFGWTFLOLBBQSAURUS.
Ignore my brother’s ugly hand.
My plate:
I went back for another piece of sashimi, california roll, california roll + sashimi, and a tuna sushi. The rolls are huge!

Monday’s breakfast: More smoothie adventures!
This time:
- 0.25 cup oats
- 0.25 cup mixed grains
- 0.25 cup soy milk
- 0.25 cup 2% milk
- 0.25 cup water
- last of my goji berries [1.5 tbsp?]
- 0.5 small carrot [yeah...I was looking for things to bulk up my smoothie with]
- 0.25 cup corn
- 2 medium strawberries
I’m not sure but I think I might have gotten a bigger cup this time? If not, well…I felt much more full after drinking, so…?
But yeah I was really impressed with the strawberries ’cause I could smell and taste them even though I only threw two random ones in! Awesome
And I couldn’t taste the carrot & corn at all–even though I definitely chewed on some carrot pieces.
Tasted good though! Not too sweet, doughy, crunchy, chewy
Kinda like last time!
Got hungry a while later, so had some soup:
Winter melon…? And shitake mushrooms.
Another snack…may have been after running…? I think that was the day I went running with my dad…? [oh no--early onset Alzheimer's?!]
My raw brownies!!! Turned out actually brownie-like this time! ZOMFG. I used almonds and raisins [I threw in 2 pieces of apricot in 'cause I didn't want to use up all the raisins], and I think I overdid the raisins ’cause it was too sweet–but that problem was solved by throwing in the peanut butter!
The stuff in the bowl is just soup with a scoop of congree [rice + water] mixed in.
Lunch–take-out.
I had like…3 bowls ’cause I was starving! I don’t understand why I’m always hungry…?
But anyway–the red stuff is something called Honeymoon fried rice? Or something? It comes with tomato sauce & chicken & onions on one side, alfredo & shrimp on the other side. And the rice + egg is underneath the sauce. It’s very yum
The noodles’ just rice noodles + shrimp + egg. <3
Nooo I can’t believe it’s almost the end of August–this has got to be the fastest summer ever!

Friday’s breakfast:
Smoothie with toast [margarine with cinnamon sprinkled on top]!
I know lots of people have done oatmeal smoothies before–but I haven’t! Therefore it’s obligatory that I give it a try–as we have a blender and everything! Damn, how did I live without this miraculous apparatus before?!
- 0.5 cup oats
- 0.5 cup soy milk
- 0.25 cup milk
- 0.25 cup water [i think??]
- 0.25 cup blueberries
- 0.25 cup corn [yeah...]
- 0.25 cup walnuts
- 1 tbsp raisins
Um yeah it’s a very random list of ingredients–but that’s ’cause we didn’t exactly have a ton of fruits and stuff around the house at the moment, I suppose I could have added more blueberries–but I didn’t want to use up the whole thing by myself
And I was originally planning to make a green walnut smoothie…but I was too lazy to wash the veggies, so I used corn and blueberries!
It was pretty good though! I ate the smoothie with a spoon since it seemed easier than sipping. Unfortunately, this breakfast wasn’t very filling
I miss the flax!
For some reason I was feeling tired that day [jet lag?], so I ended up going back to bed…to wake up at 3: 30…so I had to make my own lunch:
I hate washing vegetables
So there were only two types of veggies and three pieces of dumplings [<3] with shrimp egg noodles [basically just shrimp and wheat--not sure why they called it egg noodles...]
Dessert–MY VERY FAVORITE THING IN THE WORLD [aside from oatmeal, of course]–yamssssss!
My favorite is the purple ones–so chewy and soft! Yams are amazing
The soup the yams are cooked in is basically just water, rock sugar, and ginger. SO. GOOD. I can chug this stuff down like oatmeal!
We’re having steak for dinner tonight–so excited! Haven’t had this stuff in so long!
[Oh man, I never want this vacation to end!]
Oatmeal # 89: Papaya August 13, 2008

Sucky lighting alert!
Papaya! Haven’t had this in ages, and my brother made papaya milk on Sunday night so there was leftovers that needed to be used up! And you know what happens whenever there are leftovers in my kitchen!
Verdict–very interesting taste! Papayas are soft like bananas and pears, so they’re great in terms of contributing to sweetness and flavors, but I thought there was a very very very small undertone of bitterness? It didn’t bug me–but worth noting!
Um yeah, the chunky coffee was kind of an experiment in itself…I still had half a cup of papaya milk leftover so um…I think you can guess what happened next! It was actually pretty nasty! The flavors did not match, the coffee was wayy too strong and bitter! I ended up adding the whole thing [after forcing myself to drink half the cup...] into my oats–and it tasted great! I don’t know how that works.
Ooooh yesterday mom made the most awesome dessert ever–walnut soup!
SO GOOD.
Anyway–this morning I was so hungry that I had two formal snacks [I usually get bites of other food after my "formal snack", but I never photograph those 'cause that's boring
]
Post-yoga snack #1:
Bran flakes, cheerios, blueberries, milk.
Snack #2:
Mom’s vegetable soup!
I haven’t had turnips in ages!

Celebrating the 100th post with an entry from home! I planned this out quite well, didn’t I?
DOESN’T THIS SETTING LOOK SO MUCH NICER?!
Oatmeal #88: Chocolate Chips
I feel like I’m living in a hotel!
Anyway, this morning I celebrated with a huge bowl of oatmeal and chocolate chips. Because no party is complete without chocolate!
Oh Man. Cocoa has nothing on melty chocolate chips! Now I can never go back–ah!
Other stuff include: huge green grapes, goji berries, walnuts, soy milk, and bran flakes. No flax! But not enough room in my suitcase! I don’t miss it that much though
Anyway, went on a 50 minute run an hour after breakfast! I can’t believe I ran that long! Remember when I thought 20 minutes was a lot?! I feel quite awesome that I stuck with running for 3 months
After running, the celebration continues–with more chocolate!
Nutella & PB on white [!] toast and grapes on the side. How the HELL have I not tried this combo sooner?! As good as it was though, nutella = too sweet, I think next time I’ll cut back by a half! Could hardly taste the peanut butter at all
[but then again, this wasn't the all-natural kind, so it's tasteless in the first place anyway!]
Now that I’m all caught up on today, time to get caught up on the past two days!

Leftovers!
Most random combo ever ’cause I was trying to use up stuff
Corn, adzuki beans, plum coconut, walnuts, and flax.Well, I guess it’s not that random. On the side–coffee laced with vanilla extract–could hardly taste/smell it though!
Saturday’s post-run snack:
Pears and mocha-cino muffin top!
Yesterday’s snack of fridge items that need to be used up:
Exploded microwave egg [60 seconds = still too much!] and the last of the raspberries!
Lunch: polenta [and last of my ground flax]!!! Cooked risotto style…corn-sotto?
Creamy and awesome! Only complaint was that I didn’t make more! But I had to finish cleaning so no time!
I packed a dinner to eat at the airport–didn’t end up eating til 7: 00 ’cause there was no room to put backpacks under the seats!
Carrots & jam over a bed of frozen veggies & peas. Plus a fruit salad of one plum, peach, and pear!
SO EXCITED for lunch and dinner and for all the awesome food I’ll be eating in the next two weeks! Will take pictures when I can!

Thanks to grocery store sales, I bought 2 bags of whole grain tortillas about…2 weeks ago? And since then I’ve been having these things for lunch pretty much…every single day?

Oatmeal Challenge: Oats for lunch!
“Toasted” [aka microwaved"] rolled oats with a bit of sweetener [the plain version was too bland!], with cucumbers, and tahini-free hummus [didn't have enough beans to warrant buying a whole tub of tahini!]
It was good! The oats were like very chewy granola, the cucumbers provided crunch factor, and the hummus just gave the whole thing some extra zing with its tartness! Awesome

Cereal + veggie in a tortilla = surprisingly good! But I knew that already

Mexican-ish
Well since I had a can of black beans I thought it’d be cool to do the classic black beans & corn combo! Only instead of salsa I used ketchup…because I have a whole jug of it [thanks mom!] that I wanted to finish ASAP…like before school starts and I have to eat at the cafeteria…but I still haven’t finished it! I have never eaten so much ketchup in my life…

Doing the Splits
Check out how clever I am with the title! ‘Cause I split the tortilla in half! How funny am I?!
Anyway, I wanted to use the hummus I made again with carrots, but I also wanted to use ketchup, and I thought it’d be a waste of good hummus if the ketchup was mixed in ’cause the latter would overpower the former…so I chopped the tortilla in half and had two different “flavors”!
Monday [August 4]
Oatmeal Challenge: Corn & Carrot Soup
Finishing this entry off with some oats! I didn’t add a lot, just one tablespoon of ground oats to thicken the soup–because I read somewhere that you can use it for that! I don’t think it really did much though
Oh, and I also used my coffee grinder to “puree” the cooked carrots & corn, I figured, hey, the thing looks and operates enough like a blender….! [I should note that the instructions specifically tells me not to puree soft foods and grind seeds...well...I've used it for both and my grinder's still fine! Got a one year warranty anyway, so might as well test its limits!
]
Anyway, for the tortilla, I merely popped 0.25 of one [I think?] in the toaster–it comes out like crackers! I used the soup as a dip–delicioussss~

Hot & Cold
Nice and cold muesli [goji beries, yogurt, milk, oats, flax, cinnamon] topped with microwaved cocoa granola [used the berry crumble recipe + 0.5 tsp unsweetened cocoa--microwaved for 1 minute] Photographs really badly, but tastes good, as usually!
Dessert for Dinner
Veggies + parmesan
White & brown rice with adzuki beans and berries! Is my life exciting or what?!
Too bad it wasn’t as sweet as I was hoping it would be! Was still awesome to have such desserty foods for dinner though
I think a bit of honey would have made it perfect!
Risotto – Part II
First things first–check out tilapia! It was almost intact that time!
White&brown rice, lentils, and tons of veggies–huge bowl! I quite like risottos [risottoes?]
Thursday:
Oatmeal #84: Red, Orange, Yellow
I made this with milk powder, ’cause I have a lot of it
Definitely didn’t produce any creaminess! I added a splash of milk at the end ’cause the oats were drying up–which is what happens any time I don’t use a milk + water mixture!
Anyway, other stuff in the oats were: raspberries, corn, carrots, all-bran, walnuts, flax! Veggie oatmeal–if you haven’t tried it, try it!
Today:
More Microwave Adventures
Check out the microwaved egg at the bottom! All you need–boiling water, dash vinegar, egg, then cover and microwave for 50 seconds! The first time I did it–[yesterday, I believe], and I had an explosion…I think ’cause I only microwaved one egg, and didn’t really need 80 seconds! [I followed instructions from wikiHow
]
Anyway, I was really looking forward to this breakfast ’cause whenever I had all-bran with my oats, I always felt full! But I guess it doesn’t work like that on its own!
So I guess I either need more cereal, or oats!
Haven’t made dinner yet since I ate a ton of cottage cheese 2 ish hours ago~but it’s definitely another risotto!

Oatmeal #82: Bean Brownie Oatmeal
I made black bean brownies before and thought they were pretty good–if the right amount of sugar was added–and so this was born!
I was a little scared that it would taste bitter again, since the only “sugar” I added was half a banana–but it turned out to be enough! [I used black beans and adzuki beans, by the way]
And this mess was dinner:
Grrr I meant to make a frittatatatata–not ground-pork-like substance! Too much veggies, not enough egg!
The rice was good though
I flavored it with rice vinegar and some Japanese rice seasoning.
Monday
Muesli
Well I thought that I was going running yesterday so I made this…I should have known better! Didn’t wake up til 6: 05 a.m. so there was no time for my morning run…not unless I wanted to rush afterwards…so I didn’t go…-sigh-
Anyway, I threw together some goji berries, blackberries, and corn muesli on Sunday night, stuck it in the fridge, and it was good
The blackberries got all mushy though–probably ’cause they were frozen.
Well–off to run in about 1 hour 15 minutes!
Oatmeal #75: Cornbread pancake July 27, 2008

Yesterday’s breakfast:
Quick and easy to make
[1 tbsp cornmeal, 2 tbsp frozen corn added to my yogurt pancake recipe!] Since I went and bought yogurt on Friday [$2 a tub! How can I stay away??]–I can enjoy tangy pancakes again! The batter smelled so much like dessert!
The chewing experience was quite fun–the coarse cornmeal gave my pancakes a very subtle and grainy texture, while the corn provided little bursts of mushiness and prevented the whole thing from being too dry. This pancake totally reaffirmed my love for corn oatmeal!
I topped the huge pancake off with half a mashed banana with walnuts, and had a huge cup of milk coffee [since I switched coffee mugs, I've been adding 0.5 cup soy milk to my coffee--so I feel like I'm drinking coffee milk rather than coffee with milk--which is fine with me
]
Yesterday’s dinner was fairly normal–I figured after my oatmeal-sotto and pizzas, I needed something nice and simple!
Pasta!
With Classico Tomato & Basil sauce, tofu, cauliflower, broccoli, carrots, peppers, onions, and kale
I also had dessert:
Peach yogurt with cinnamon sprinkled on top!

Catch-up post!
Haven’t been feeling very adventurous lately…and my fridge was rather empty, so it’s just been nice, classic comboes for the past few days
Monday:
Chocolate-Raspberry Oatmeal
Made with cottage cheese, served with cinnamon gree tea [added the cinnamon in--but didn't really change the flavor much!]
Tuesday:
Cinnamon Coconut Oatmeal Pancake
I tried a new pancake topping instead of the usual banana! The last few scoops of blueberry-cherry jam and walnuts–super yum!
Yesterday:
Blueberry, Corn, Longans Oatmeal
Again made with cottage cheese
That stuff is just magical when cooked with oats! Had a cup of coffee on the side.
Today:
Beans for Breakfast
Sweet bean soup again! Added some rice this time ’cause I was low on pearl barley and black-eyed peas! I added more water this time, and so ended up with a lot more of the soup
Happiness!
I had a cup of coffee with this breakfast–it’s quickly becoming a habit! Not sure if this is good or bad…
Yesterday was snack day for me!
Post-run snack:
One black corn oat chunk, one sliced up Golden Delicious apple, and one heaping spoonful of peanut butter! PB + fruits = amazing.
Was going out for dinner with my housemate at 6: 15, which mean I was having dinner at least 1.5 hours later than usual, so I cut up some raw yellow peppers for a snack after lab:
Dinner was yet another contribution to pizza week! We went to Wooden Heads–a gourmet pizza place–unfortunately I only sat down for about 15 minutes because I had to be back at the lab! The next half hour was possibly the hungriest half hour ever
Luckily my lab-mate was nice and I got to leave 10 minutes early
My pizza was called Arrogosta–curried lobster veloute [a French sauce], grilled red onions [I'm really developing a taste for onions these days--weird!], mushrooms, and smoked salmon! It was SO. SO. GOOD. Smoked salmon is amazing! The sauce was amazing! And it was about $14 plus tax and whatnot–not bad at all!
Oh, and thank you Jenn for nominating me! I always knew I was awesome, but it’s nice to hear it from someone else
