Yesterday:
Garlic Toast!
+ almonds & peanuts
And oatmeal smoothie! Except I was running low so the whole thing probably contains 10% oatmeal.
- oatmeal, coffee, cottage cheese, milk, rice milk, cinnamon, banana, frozen berries
It’s like a fruity, chewy latte
I also baked a green tea cake:
I haven’t baked in a while! But I’m glad it turned out well–could have been a bit more moist though…maybe more milk and/or less oven-ing next time.

Elongated vowels to emphasize my excitement!
Now that exams are over, regular posting of entries and blog reading can resume!
First bowl of stove-cooked oatmeal in months:
My breakfast just a few minutes ago!
- oats, cinnamon, milk, small banana, white & dark chocolate chips, almonds
+ hazelnut mocha
Against a snowy backdrop! We’re having some kind of snow storm right now, which kinda kills my soul but at the same time I’d rather be stuck in the snow at home than at school…
Yesterday:
The same thing in pancake form and without the white chocolate chips:
Quaker’s quick oats just aren’t powdery enough for the texture that I usually get! But I kinda like this chewy version
On the morning of my last exam:
- strawberries!, a very small banana, flax, coffee, cottage cheese, mocha, PB
There were more strawberries involved than depicted above, but they were hidden
And yeah…there’s a whole bunch of exam-time oatmeal pictures that I skipped, but that’s ’cause those ones aren’t really pretty! I’ll probably post them all in a blob later on though–just because some of them are kinda fun! But I’m not going to upload them now because I have HOMEWORK to do.
[I think my TA may have taken the "spirit of giving" concept a little too far...]

Oatmeal #138: Nutty Oats – Part IV + applesauce
- applesauce, sliced &blanched almonds, cinnamon, ground ginger, shredded coconut, PB, flax, milk, quick oats, organic oats
Applesauce in pancakes! I have never tried it–have you? I added the entire mini container–so I managed to get the apple flavor!
Also–I decided to blend two different types of oats together because I’m running out of quick oats [my weapon of choice for microwave pancakes] so I decided to mix it with organic oats–it turned out quite well, actually! I was afraid it might take longer to cook, but it didn’t! And it was much chewier too.
+ spiced chai tea with milk. I haven’t had tea + milk in ages! If I had sugar around as well, it would have been complete!
My very amazing lunch:
Something I haven’t had in a long time [since last year!]–couscous! Ever since the caf introduced it into my life, I have been hooked. Grains = awesome in all forms!
The above contains: couscous, dried apricots, peppers, carrots, beans, tomatoes, raisins, peas, lemon-garlic vinaigrette
Extra large lunch, extra awesome.
Night-time snack:
I believe it was for an all-nighter. Can’t remember if I succeeded in staying up all night or not…I probably didn’t…

So I only need another week of all-nighters and maybe 3 days of sleeping over at the lab, and then I will be writing my last exam and then going HOME!!!

The caf served these smoothies on Sunday–which was majorly exciting! Once in a while they’d spoil us like this…
Long story short: I took some of that stuff home for oatmeal!

This week’s oatmeal has been so full of excitement! I haven’t had brown sugar in my oatmeal since…high school? That was how my mom made them!

The lack of sleep is driving me nuts. Not to mention the fact that the chairs at the lab are extremely uncomfortable for sleeping on
It’s at times like these that I wish I was a midget…

Oatmeal #136: Apple & Coffee Pancake

I need to figure out how to make apples look better in pictures….unfortunately the sucky lighting in my room doesn’t help!
But oh well–it was fun tasting
The smell of cooked apples and coffee was fantastic!

Check out the snow in the background! How am I going to get to all my classes on time if I’m sliding all over the place? I hate snow
Luckily…it all melted away pretty quickly!

Banana bread pancake–same as what I had on Wednesday–but with peanut butter! <3

I always thought chai would smell more cinnamony–but all I could smell was something that’s like dried orange peels [star anise?]

I finally got my turkey chili!
Too bad I had to scarf it down in a hurry to get to bio on time

Am officially in need of more english muffins in my life! Too bad the cafeteria doesn’t bring them out that often
The tea was absolutely horrible. It was wayyyy too lime-y. I couldn’t even force myself to chug it down. So I decided to save it for lunch the next day:

Unfortunately, I had too much tea–so I still have some of it sitting in my fridge!

With my orgo homework in the background! But I was actually working on commerce

Noodle salad + tofu + kidney beans
All-night snack #2:
I think that’s foccacia? I’m not sure what that type of bread is called…but it’s amazing with Herb&Garlic cream cheese.
+ chocolate chip cookie.
And exciting news [for me, that is]–I managed to get 7.5 hours of sleep yesterday! That’s almost 8 hours! Oh my god it felt so weird to sleep properly on a pillow and everything…[I have been sleeping on my bed...but I was half on my chair, and half on the mattress
]
Am going to the gym today…since I’m feeling so energetic. [That may or may not have something to do with the huge cup of tea I just chugged...]

Catch-up post!
Haven’t been feeling very adventurous lately…and my fridge was rather empty, so it’s just been nice, classic comboes for the past few days
Monday:
Chocolate-Raspberry Oatmeal
Made with cottage cheese, served with cinnamon gree tea [added the cinnamon in--but didn't really change the flavor much!]
Tuesday:
Cinnamon Coconut Oatmeal Pancake
I tried a new pancake topping instead of the usual banana! The last few scoops of blueberry-cherry jam and walnuts–super yum!
Yesterday:
Blueberry, Corn, Longans Oatmeal
Again made with cottage cheese
That stuff is just magical when cooked with oats! Had a cup of coffee on the side.
Today:
Beans for Breakfast
Sweet bean soup again! Added some rice this time ’cause I was low on pearl barley and black-eyed peas! I added more water this time, and so ended up with a lot more of the soup
Happiness!
I had a cup of coffee with this breakfast–it’s quickly becoming a habit! Not sure if this is good or bad…
Yesterday was snack day for me!
Post-run snack:
One black corn oat chunk, one sliced up Golden Delicious apple, and one heaping spoonful of peanut butter! PB + fruits = amazing.
Was going out for dinner with my housemate at 6: 15, which mean I was having dinner at least 1.5 hours later than usual, so I cut up some raw yellow peppers for a snack after lab:
Dinner was yet another contribution to pizza week! We went to Wooden Heads–a gourmet pizza place–unfortunately I only sat down for about 15 minutes because I had to be back at the lab! The next half hour was possibly the hungriest half hour ever
Luckily my lab-mate was nice and I got to leave 10 minutes early
My pizza was called Arrogosta–curried lobster veloute [a French sauce], grilled red onions [I'm really developing a taste for onions these days--weird!], mushrooms, and smoked salmon! It was SO. SO. GOOD. Smoked salmon is amazing! The sauce was amazing! And it was about $14 plus tax and whatnot–not bad at all!
Oh, and thank you Jenn for nominating me! I always knew I was awesome, but it’s nice to hear it from someone else

Check out the creaminess!
I think cottage cheese works way better than milk!
Also, mashing the blackberries into the oats really enhances the flavor of the cottage cheese in the oatmeal
I actually had the same thing on Friday, but my camera ran out of batteries that morning so there was no picture
But on Friday I also didn’t cook the beans properly so it was very unpleasant to eat!
Anyway, the beans didn’t really lend any taste to the oatmeal–just extra chew! It felt like I was chewing walnuts, actually
Along with a cup of mocha–no sugar this morning–still tasted great!
Oatmeal #70: Cinnamony Coconut Pancakes July 20, 2008

Had pancakes again yesterday!
I bought a small-ish bag of unsweetened shredded coconut and decided to try it out…unfortunately, I couldn’t really taste it at all! Couldn’t even smell it!
Maybe I added too little? I only put a tbsp in…the cinnamon was too overpowering. However, I definitely felt it when I was chewing, so yay?
It’s been a really long time since I had the stuff…but I wasn’t expecting it to be so…flavorless?
I had it with a cup of mocha. I’ve finally decided to give chocolate coffee a try! All I did was add a teaspoon of unsweetened cocoa to my instant coffee mix and added half a cup of soy milk–tasted really great! It was like caffeinated chocolate milk
Lunch was the same dealio as yesterday, so no pictures
I made some awesome dessert/snack stuff on Friday morning:
Sweet bean soup! [it's a pretty popular Chinese dessert
] Made it with red beans, black-eyed peas, and pearl barley–just like my mom did! I added raw sugar…but I think she used something else. It was really good
I had about half a cup of this for snack yesterday.
Happiest dinner ever!
Raw orange pepper stuffed with green lentils, chickpeas, onions, and parmesan cheese. Microwaved frozen veggies on the side! I also had a bowl of soup, which contained the excess of what was supposed to go in the pepper
I guess I overestimated how much half a pepper could hold! But I’m glad I had the soup! It smelled really good, could have used some salt [or more broth] though.
Chickpea Lentil Soup
Serves 1
- 1/4 cup chickpeas
- 1/4 of a medium white onion
- 2 tbsp green lentils, pre-soaked [keep the liquid]
- 2 tbsp broth
- 1.25 cup water
- salt, to taste [or more broth] – optional
Boil the onions and water over medium high heat, then add the lentils [and the liquid it was soaked in]. Cook til mixture bubbles again. Add chickpeas, broth, and salt. When the soup starts boiling, turn heat off.
Oatmeal #69: Chocolate Raspberry Pancakes July 17, 2008

I had about one or two teaspoons of yogurt left, so I threw in some cottage cheese and soy milk into the batter with the yogurt–takes away that cheesecake smell and taste, but still loved it! Decided to make it one large pancake today ’cause it’s easier to fit on a plate
I followed my pancake recipe and added a teaspoon of cocoa and 6 raspberries [and the cottage cheese and soy milk to fill the place of the yogurt, of course
]–I’ll definitely be making a ton of pancakes for the remainder of the summer!
Today’s lunch was a PB&J sandwich and an egg muffin! I used two pieces of my spiced flax bread and cut them in half for the filling
I can definitely eat this everyday!
Oh, and the drink is my banana rice milk, with cinnamon added
Finally, for dinner–pasta & cheese!
The sauce is a mixture of parmesan, half a slice of cheddar cheese, and about 2.5 tsp of cottage cheese. [I'm already done one container of cottage cheese, and it's only been 2 days since I opened it! Do I really eat that much?
]
Unfortunately, I had nothing but frozen veggies, chickpeas, and tofu left
So my dinner ended up being quite small! So I ended up having dessert, which I didn’t photograph ’cause it’s boring

I’m taking the afternoon off from lab tomorrow! So excited
