Oatmeal #132: Veggie Muffins I December 2, 2009

I’ve been craving muffins as a meal lately, and I love veggie muffins, so I thought I’d make some! It’s always nice when you can make fun foods into something that’s also nutritious
And since I’ve been staying up so often to run sessions at the lab, motivation to make healthy things is pretty much non-existent, so it’s nice to just throw a frozen muffin into a toaster and serve with yogurt and fruit for a quick lunch! [Lunch because making oatmeal for breakfast is never too much effort!
] Besides, I can’t scarf salads down on a daily basis–vegetables are always more fun in muffins and pastas!
Oh yeah, this recipe is based on all the Morning Glory Muffins I’ve seen around the net! But I don’t have pineapples or anything like that and I wanted to add oatmeal so I ended up with my own version.
Carrot Coconut Goji Oat Muffins
makes 6 huge muffins
1 cup whole wheat flour
0.5 cup quick oats
1 tbsp each of wheat germ & flax
2 tbsp ground pecans or other nuts [optional]
1 tsp baking powder
1 tsp baking soda
0.5 tsp cinnamon
1 tsp ginger
1 packet sweet & low [or sub 1 tbsp sweetener of choice]
0.25 cup brown sugar or sweetener of choice
1 egg
1 tbsp EVOO
0.5 cup milk
~1 cup grated bb carrots
0.5 cup goji berries, soaked in milk
0.25 cup unsweetened coconut
Mix everything and let sit for 3-4 hours.
Bake at 350F for 20-25 mins
It is awesome stuff. Best when it’s heated and served with plain yogurt! I’m planning to bake another variety using zucchini tomorrow morning when I get back from lab! So! Excited! Maybe I’ll bake some coffee muffins for next semester so I can be wired for more overnight sessions at the lab! Whoo! MUFFINSSSS!
And on a side note–2 weeks and 5 days til winter vacation!

My breakfast invites you in:
I had this breakfast two days in a row because grapes were on sale and I want to eat them before they go bad! And also because I like grapes and don’t eat them often enough
0.33 cup oats, water, milk
flax, wheat germ
7 grapes, 0.5 small banana, 1 fig!
sunflower seeds
1 tbsp PB
This is what I had the day before [nov 8]

Same thing, but with goji berries, cocoa powder, chopped up grapes instead of halved ones, and no sunflower seeds! I chop the grapes up because: 1. easier to eat 2. there are seeds in them and I don’t want to be spitting out seeds while I’m supposed to be enjoying breakfast!
And then I got camera happy:
The weather was so nice and warm the entire weekend! Lots of good light for photog-ing
Yummehhh!
I also had a huge cup of tea [green tea?] with my meal but my cup is too big and would ruin the composition of the photo! I can’t wait to go home for the holidays because I would have nice bowls and cups to play with instead of all these white ones!
And here’s what I’ve been eating for lunch ever since Friday [? or Saturday?]:
Coleslaw, frozen spinach, corn, tofu, bell peppers, grape tomatoes
parm, curry powder, mustard
apple
green tea
But I bought feta cheese [$0.99 per tub!] I can add that to the mix as well! Whooo!
AND MIDTERMS ARE FINALLY OVER! 6 weeks and 6 days til I go home for the holidays!

It just occurred to me how appropriate it is that I have a Nutty Oats series on the blog the same time of year that I’m about to go nuts from a combination of homesickness and stress…see how hilarious I am?

Kinda refreshing to have a change from the usual routine! I think I’m going to try and have something different for breakfast once every week so I can have oatmeal at the cafeteria XD
Dinner:
Hummus, baba ghanoush, roasted red pepper sauce + bread, tuna, kidney beans, chickpeas, coffee
All-nighter snacks:
Fruits, pistachios, apple, and coffee.
Only my plan failed and I fell asleep…

Sometimes I get a huge, overflowing bowl of oatmeal, and sometimes I barely get anything! It’s such a mystery–must figure this out!
Massive breakfast part 2:
For some reason I was still hungry?!
Lunch:
<3 Thai rice noodle salad with lime dressing, sesame, and some other stuff. I buy this for lunch every time I can’t eat at the caf! The vegetable salads look so sketchy
Chicken gumbo. I had to dilute it with water since it was so salty D:
Snack:
Pumpkin seeds and almonds! I think it’s the second time I’ve ever had pumpkin seeds–it’s awesome!
And I ate a bunch of this before I took the picture

Scrambled eggs, tomatoes, mushrooms, kidney beans and chickpeas. I wish I had some tortillas…stuff doesn’t fall out so easily~
I had this for breakfast on Sunday as well–which meant I got to eat oatmeal at the cafeteria! I haven’t done that since last year when I was just starting this blog~

Free Kashi bars from the cafeteria! Got the coupon in the mail–I also got a free coffee mug! This is why living in residence is awesome

Dinner:
Surprisingly, I was full on this…and it didn’t really even look like much~weird.

Strawberry yogurt mixed with Greek yogurt, kashi, peanut butter.
I love weekend lunches ’cause that means I get to binge on Greek yogurt!!
Dinner:
Pumpernickel with baba ghanoush and cucs.
Crackers with baba ghanoush.
Tofu, tomatoes, tons of chickpeas, and potato salad with veggies and capers. This was the first time I’ve ever tried them–sad to say I don’t really like them!
Dessert:
Cookie with honeydew.

Not sure what else was in this! I have a feeling it may be cinnamon though…since I add it to everything

A very fruity breakfast:
Even my tea was flavored with fruits! It’s basically green tea flavored with pineapple, orange, and passionfruit–was really good! I could taste it

For some reason…I didn’t really like watermelon, cataloupe, and honeydew in my oatmeal…maybe ’cause they weren’t sweet enough? It was kinda bland :\

My parents are awesome
But I love how they delivered my package in their Thanksgiving turkey box to remind me that they had a feast and I had caf food

Oatmeal #126: Pumpkin Oatmeal Pie

With toasty bread crust and vanilla yogurt icing.
I’m definitely addicted to eating oatmeal and sandwiches in general like this!
Dinner:
Mac n’ cheese–with turkey for Thanksgiving! I also threw in spinach, tomatoes, and an egg~
One of my ziplog boxes melted when I was making this
The tip was touching the hot part of the stove and it melted a hole right through!
Oct. 11

Dinner:
Okay first of all–imagine the above, but times three.
And the caf had salmon and chicken–so how can I not take advantage of that? Their lo mein noodle salad is also awesome -drool-
Dessert!
I bypassed this tray of warm, chocolatey fudge brownies that was just calling my name–so I grabbed some, along with a chocolate chip cookie and pineapples! Thanksgiving weekends at the caf are amazing!

Top left: Cheerios, crackers, and PB with milk.
Bottom left: whole wheat bread, baba ghanoush and cucs
Bottom right: some sort of tomato clam chowder with lots of chickpeas and kidney beans.
Whoo hoo!
And argh–don’t know whether I should go to the gym today…since I am no where near done this assignment that’s due tomorrow
Oatmeal #113: Chamomile September 23, 2008

Sunday:
- oats, flax, walnuts
- 1 tbsp goji berries
- 1 tsp unsweetened shredded coconut
- 0.5 cup mandarin oranges
- 1 cup chamomile tea
- 0.25 cup milk
I’ve tried chamomile tea once before–and found that it smelled great–like flowers–but didn’t really have much taste~therefore I also couldn’t pick out the flavor in my oats! Oh well~
I forgot to bring my water bottle when I headed over to the lab after lunch…so I tried something new:
Has anyone else seen/tried this?
I think it’s a new product…Nestea Vitao. I got the Fuji apple green tea–great flavor! You can actually taste the tea and apples together, which is pretty cool, although I think it’s something you can easily make at home just by blending cold green tea with apple juice–I guess it’s convenient if you’re in a rush!
According to what I found out on google, some people seemed to have experienced some weird bout of hyperactive jitteriness after drinking this? I didn’t feel anything though, so it’s probably more an idiosyncratic thing than a general thing!
Dinner:
Pasta salad! I think I like pasta salads even more than regular pasta with sauce–’cause there’s usually too much sauce and not enough flavor.
Anyway, I found a new salad dressing combo that I really like! Here’s that I had:
- 1 tsp extra virgin olive oil
- 2 tsp lemon juice
- 1 tbsp rice vinegar
- 0.5 tsp oregano
- 1 tsp parmesan cheese
It sounds like there’s too much acid, but there really isn’t! You get a great mild, lemony flavor and it’s rather awesome
Definitely will be using this again in the future!
