Writing my thesis now but I do have an update [moar oatmeal!] coming up–and it’s crunchy!
The only reason I’m posting is because I wanted to enrich your lives with my puns before I forget

They look like cookies but soft like muffins? But who cares ’cause I like the way they taste 😛 I haven’t baked in a while so this was fun!

But anyway isn’t it exciting that I’m updating? 😀 Too bad I couldn’t even get oatmeal into this post either!
Anyway, I got the recipe from Susan V but I don’t have balsamic vinegar or anything so it’s just regular chocolate cookies–but with ginger–exciting huh?
Spicy Cocoa Cookies [?] – 11 to 12 cookies
1 cup whole wheat flour
0.5 tsp baking soda
0.5 tsp baking powder
1.5 tbsp extra virgin olive oil
2 tbsp fruit jam of some flavor [too lazy to look it up…wildberry?] or more sugar
1 tbsp cocoa powder
0.25 cup brown sugar
0.33 cup water or milk/soymilk
1 tsp ground ginger [optional]
1. Mix all together–I never really got into the “add wet into dry ingredients” thing–I am a rebel!
2. Preheat oven to 350F.
3. Spoon batter onto baking sheet/pan/etc. Make them as thick or thin as you like–make ’em thinner if you want a more biscuit texture
4. Bake for 10-11 minutes.
Next time I’ll definitely add some oats in place of some of the flour because I’ve been neglecting the mission statement of this blog. And because life without oats is an empty and fiber-less life.

Been craving warm, buttery, crispy toast!
Buttered toast, dark chocolate syrup [made in the trusty microwave!] on a huge sliced banana, rice milk + milk
I ended up being able to only eat one piece of toast 😛 Possibly because I added some almonds:
Chocolate almonds = new favorite snack!
All that was missing was ice cream! How amazing would having banana splits for breakfast be?! Too bad I didn’t think of that til now…

I highly do not remember the dates for these meals, so I’m just going to guess:
Congee with mushrooms, rice, celery, ginger, minced meat [pork?] and oysters! Dad made this–it was really good~
Heheh. Instant noodles. With chicken wings and veggies. I think this was a late lunch and that’s why we had a smaller meal?
Anyway, that doesn’t matter ’cause bubble tea followed as a snack!
It is tres awesome that mom knows how to make this stuff. Best bubble tea ever.
Oatmeal #102: Bubble Tea
There were leftover tapioca from bubble tea–so I put them to good use!
- chocolate chips
- tapioca [2 tbsp?]
- 3 glutinous rice balls
- blanched almonds + walnuts
- 1 cup tea + 0.25 cup milk
I think I ran on the day I ate this, but I’m not sure? Either way–yams!
Mom made the round rice ball things, and we bought the dumplings from a store, but I was in charge of cooking everything 😀
One last bowl of sweet walnut soup with glutinous rice balls for dessert at night:

Oatmeal #103: Sweet Walnut Soup
Thank god for leftovers:
My breakfast on the morning of my flight to California. I didn’t have time to cook the oats, so I just dumped raw oats into the walnut soup and ate the rest of the leftover fruits for breakfast.
Anyway, the pictures that follow aren’t the complete set–the rest of the food pictures are on my friends’ cameras, and they haven’t uploaded the pictures yet–so food from the first 2 days [in Pasadena] aren’t here yet!

Had this for breakfast every morning–not the best thing for me, but better that than nothing?
Also, apparently I’m friends with people who don’t need to eat–therefore I pretty much subsisted on that stuff the entire day at Disneyland until dinner time. Ridiculous. [I had a good time nonetheless, but why do we have to skip food?!]
Bought a pomegranite paradise smoothie with a free daily vitamin boost [don’t know whether this really is what it is–but given the nutritious meals I had during the day, I figured I had nothing to loose] from Jamba Juice that night, originally as my dinner, but then I realized I’d rather have real dinner food, so I had some form of soup [really salty, I had to dump over half a cup of water in the thing to tame it] , and saved the rest of my smoothie for breakfast the next day:
With a banana! I was so happy I could cry.
That stuff is really red…

I’m so glad I saved enough $$ for this. On the left, wild rice salad with chicken and veggies, in the middle–pasta salad, on the right–fruit salad. All for $4.99!
Dinner was airport food, but still a lot better than what I’ve been having in the past couple of days:
I had enough $$ to buy something to drink, so I got a tall sweetened ice coffee:
I had to keep going back to add more milk, since I like my coffee to be creamy 😀
So I’m back in school now, and dad flew from BC to help me move stuff into my dorm. He stayed in this inn that offered free breakfast. So of course I was all over that–I mean, check this out:

My breakfast this morning:
I went back for half a piece of pound cake and a bit more milk 😀 Great stuff!
All caught up on meals! I think I still have some oatmeal pictures left on my home computer, but I’m not going to worry about those too much. Anyway, tomorrow’s breakfast is very exciting because I’ll be having oatmeal for the first time in 5 days! I think I’ll go to sleep early tonight so breakfast will arrive earlier 😀

Wow–meant to post this yesterday night–but I fell asleep at like…7: 00 p.m. (?!) before I had the chance!
Anyway, I declare this week pizza week!
Yesterday’s awesome dinner:
I got the idea from here, actually, although mine obviously looks nothing like the picture 😀 [Does anything I create ever look like the pictures?!] Probably ’cause I didn’t bake anything? I didn’t have enough time to cook the polenta in the morning…with my run and all…so I did it after lab, and by then I didn’t really care what shape or color my polenta was as long as I got to eat it real soon 😛
So it’s like pizza…made on the stove! How exhilarating 😀
I didn’t really leave enough time for the polenta to firm up or anything, so it was half firm, half not, and ended up not really needing a knife at all, actually!
I think the pizza was also a little too small…but I still had leftover polenta, so I had more for dinner tonight!
Instead of boiling, I sauteed my toppings–even the red peppers! Well…I added the peppers last so they wouldn’t be too cooked, but it sure was exciting 😀 And since I’m out of chickpeas, I used soft tofu instead!
For lunch yesterday, I had something that looks/sounds quite gross, but tasted quite nice 😀 [surprise surprise–I think this should be the blog slogan ]
Leftover sweet bean soup, soft tofu, all-bran, raisins, sunflower seeds, and one golden delicious apple.
I chose the picture where the apples covers most of it so the grossness doesn’t take over 😀
Today’s lunch was like a regression to the mean…aka normal:
Scrambled egg, frozen corn, frozen mixed veggies, raisins, and ketchup. Along with a small banana and the last chocolate cinnamon raisin blob thing 😀
This entry’s already getting too long…so I’ll put the breakfast pictures in another entry!

I had about 1.5 cups of milk left that expires at the end of today! So I decided to bake stuff 😀
I’ve been meaning to make these muffins for a while now, and today I guess I finally have motivation to make them! 😀 I put chickpeas, spinach, and parmesan in them and snacked on one as I was taking pictures–it was really good! I was worried it would be all lumpy ’cause the pre-bake mixture was really liquidy–but they came out fine! I was very relieved.
And whoohoo–the bread came out great! A little flat though, so I cut thicker slices to compensate 😀
I only had a small bite, but it was chewy and I could actually taste the spices I added! And you have no idea how tempted I was to add oats! But I didn’t want to throw too much stuff into the bread–maybe next time? 😛
Spiced Flax Bread
Makes 9 thick slices
1 cup flour
1 tbsp ground flax
2 tsp cinnamon
0.75 tsp ground ginger
2 tsp baking powder
0.5 tsp baking soda
2 tbsp applesauce
1 tsp vanilla extract
0.25 cup + 2 tbsp milk/soy milk
1 tsp brown sugar
Preheat oven to 350 F.
Mix all ingredients together [or you can mix the wet and dry ingredients separately then combine them–I’m just too lazy to wash two bowls 😛 ]
Bake for 17-20 minutes.
For those of you counting calories:
Nutrition info [per 1 slice]: 65 kcal, 0g fat, 13g carbohydrate, 1g fiber, 2g protein
Hmm…maybe I will bake another loaf with oatmeal and maybe another tablespoon of flax…the fiber count came out lower than I expected 😐

Yesterday’s lunch & dinner:
My english muffin! Sliced in half, toasted, and topped with ketchup, 4 slices of cucumber, and half a slice of cheddar cheese. On the side I had half a medium banana and a nectarine! Lunch was great, but really small 😦
Vegetable soup again–olive oil, broccoli, cauliflower, carrots, mushrooms, soft tofu, frozen mixed veggies, sunflower seeds, chicken broth. On the side–2 slices of cucumbers, half a raw red pepper, and blueberries.
Today I had the same thing for lunch, so moving on to dinner!
Chunky potato & barley soup–potatoes [duh], barley [duh], frozen mixed veggies, corn, soft tofu, mushrooms, olive oil, chicken broth, Classico Tomato & Basil sauce. On the side–raw red peppers, blueberries and blackberries! And a cup of water. And now it’s time for bed!

When you predicted “lightly scattered showers” for the morning, I think what you really meant was “big happy bucket of never-ending drown-in-your-socks rainstorm“.

Bought for $11.29–tax and all that shebang included. I guess I’ll find out how fine it grinds tomorrow. Hope it doesn’t end up grinding my nerves.
Hopefully this means that I can start including flax seeds into my daily breakfasts from now on!
Attempted to bake english muffins today: [emphasis on the word “attempted”]
I don’t have yeast or anything fun like that, so that was the reason I ended up with so little stuff…I tried using yeast substitutes [ie. baking soda and rice vinegar]…but I think I didn’t add it properly ’cause there was fizz…but it didn’t really do much…ugh. Maybe I will buy some yeast next time…
I ate the smallest muffin with pb & j as a consolation snack 😀
