Baked Yogurt Oatmeal Pancake

Makes 1 huge pancake, or two smaller ones

0.25 cup + 2 tbsp quick oats
2 tbsp flour
1 tsp baking powder
1 tbsp flax
1 tbsp water
0.25 cup plain yogurt

Preheat oven to 375 F. Mix all ingredients together. Pour batter onto a baking tray lined with parchment paper or baking mat, forming a circle. Bake for 15 minutes, then flip the pancake and bake another 5 minutes.

Nutrition info: 250kcal, 6g fat, 40g carbohydrate, 5g fiber, 10g protein

I haven’t tried a baked oatmeal pancake yet, especially with the yogurt in the pancake…I will have to do this very soon! I’m hooked on oatmeal pancakes. Mmmm.

Try microwaving!
Just follow the recipe but use a plate instead of baking sheet and microwave for 2 minutes [i do two 1-minute intervals]
