Microwave Oatmeal Pancake

Stir together in a bowl. Pour batter onto plate and spread it around til you get a pancake shape. Microwave 2 minutes!

Gave something like this a try this morning….Although very different haha. It was like a oatmeal, protein powder souffle. It needed to either be sweeter- adding some honey and brown sugar, or cream cheese- or peanut butter on it. I’ll post some pics on my blog!

And yeah, my tastes are mild compared to other people so it’s not surprising you needed to add sugar :p

Tried this, total fail! :[ I did deviate from the recipe a lot though. 1/2 cup old-fashioned oats (instead of quick oats), 1/3 cup water, 1/3 cup soy milk (instead of milk), 1/2 teaspoon baking soda (instead of baking powder), cinnamon, and a little bit of cottage cheese. Perhaps everything was too watery–not sure! But it still tasted great, of course, because it was oatmeal :]

I find that old fashion doesn’t work well with my method since it takes longer to cook and stuff, what I tend to do is mix quick oats & old fashion–maybe half of each? Either that or use less liquid–let me know how it turns out if you decide to give it another try!

I remade this just a minute ago, and I’m eating the pancake as we speak! I used 1-minute oats, didn’t measure everything out, but it turned out ok :] Delicious, hope you write more soon.
