Pumpkin Oatmeal Pie

Makes 2 servings [or one huge one!]

Ingredients

The Topping

1. Microwave/cook the oats, add the flax [or not] whenever

2. In a separate bowl, mix the pumpkin, cinnamon, and ground ginger together

Crust

1. Toast the bread, cut in half diagonally–and done! 😀

Assembly

1. Spread the cooked oats on top of the bread
2. Add the pumpkin on top [or bottom, or sandwich the oatmeal layer in between–whatever!]
3. Drop a spoonful of yogurt on top

great idea i too am a fan of pumpkin, and i am always looking for more ways to eat it, this is a great idea, iam gonna try it.
