Oatmeal #100 August 28, 2008Posted by oatmeal in Breakfast, Recipes, Snack.

Birthday card for my friend, Tina–happy birthday dude!
[I like rats 😀 ]
I basically threw in the dessert mom made from the night before into my oats. So combining two of my favorite things seemed fitting for the 100th oatmeal experiment!
- 0.33 cup oats
- 0.25 cup water
- 0.5 cup adzuki bean & lotus seed dessert
- 9 glutinous rice balls
- 0.25 cup milk
- 6 almonds
For some reason, the almonds make me think of squirrels 😛 It looks so forest-y with the green bowl!
Oatmeal #101: Chocolate Matcha Smoothie
The partay continues after my 49 minute run [couldn’t quite make it to 50 after going up a huge hill 😛 ]
This smoothie was the only reason I only had 0.33 cup of oatmeal this morning–didn’t want no overdosin’!
- 1 cup boiled water
- 1 tsp matcha powder
- 0.25 cup soy milk
- 2 tbsp quick oats
- 1 tbsp chocolate chips
I dissolved the matcha powder in boiled water and let that sit for about…half an hour? And then I blended everything else together–it was a great way to make drinking tea fun! [I’m not really a tea person 😛 ]
I actually ended up with a bigger cup than I was expecting–oh well! 😀
Needed either some sugar or more chocolate~not quite sweet enough, but it was pleasantly mild with a very prominent green tea taste–so no complaints there!
2 more days til I leave for California! [I think after this trip, I’m going to have to stop spending $$$ for the next 5 years…]

Celebrating the 100th post with an entry from home! I planned this out quite well, didn’t I? 😀
DOESN’T THIS SETTING LOOK SO MUCH NICER?!
Oatmeal #88: Chocolate Chips
I feel like I’m living in a hotel!
Anyway, this morning I celebrated with a huge bowl of oatmeal and chocolate chips. Because no party is complete without chocolate! 😀
Oh Man. Cocoa has nothing on melty chocolate chips! Now I can never go back–ah!
Other stuff include: huge green grapes, goji berries, walnuts, soy milk, and bran flakes. No flax! But not enough room in my suitcase! I don’t miss it that much though 😀
Anyway, went on a 50 minute run an hour after breakfast! I can’t believe I ran that long! Remember when I thought 20 minutes was a lot?! I feel quite awesome that I stuck with running for 3 months 😀
After running, the celebration continues–with more chocolate!
Nutella & PB on white [!] toast and grapes on the side. How the HELL have I not tried this combo sooner?! As good as it was though, nutella = too sweet, I think next time I’ll cut back by a half! Could hardly taste the peanut butter at all 😦 [but then again, this wasn’t the all-natural kind, so it’s tasteless in the first place anyway!]
Now that I’m all caught up on today, time to get caught up on the past two days!
Friday’s breakfast [Aug 8]
Most random combo ever ’cause I was trying to use up stuff 😛
Corn, adzuki beans, plum coconut, walnuts, and flax.Well, I guess it’s not that random. On the side–coffee laced with vanilla extract–could hardly taste/smell it though!
Saturday’s post-run snack:
Pears and mocha-cino muffin top!
Yesterday’s snack of fridge items that need to be used up:
Exploded microwave egg [60 seconds = still too much!] and the last of the raspberries!
Lunch: polenta [and last of my ground flax]!!! Cooked risotto style…corn-sotto? 😛
Creamy and awesome! Only complaint was that I didn’t make more! But I had to finish cleaning so no time!
I packed a dinner to eat at the airport–didn’t end up eating til 7: 00 ’cause there was no room to put backpacks under the seats! 😦
Carrots & jam over a bed of frozen veggies & peas. Plus a fruit salad of one plum, peach, and pear!
SO EXCITED for lunch and dinner and for all the awesome food I’ll be eating in the next two weeks! Will take pictures when I can!

Wow, I’m really bad at updating this–I don’t know how the three-times-a-day bloggers do it!
Oatmeal #82: Bean Brownie Oatmeal
I made black bean brownies before and thought they were pretty good–if the right amount of sugar was added–and so this was born!
I was a little scared that it would taste bitter again, since the only “sugar” I added was half a banana–but it turned out to be enough! [I used black beans and adzuki beans, by the way]
And this mess was dinner:
Grrr I meant to make a frittatatatata–not ground-pork-like substance! Too much veggies, not enough egg! 😦
The rice was good though 😀 I flavored it with rice vinegar and some Japanese rice seasoning.
Well I thought that I was going running yesterday so I made this…I should have known better! Didn’t wake up til 6: 05 a.m. so there was no time for my morning run…not unless I wanted to rush afterwards…so I didn’t go…-sigh-
Anyway, I threw together some goji berries, blackberries, and corn muesli on Sunday night, stuck it in the fridge, and it was good 😀 The blackberries got all mushy though–probably ’cause they were frozen.
Well–off to run in about 1 hour 15 minutes!
Oatmeal Challenge: Pizza & Bean Balls July 26, 2008Posted by oatmeal in Dinner, Lunch, Oatmeal Challenge, Recipes.

Yesterday, I finished off pizza week with oatmeal!
Along with kale and the excess toppings in a separate bowl! It was good that I had extra food, ’cause the pizza was quite small 😦
The dough was nothing fancy–oats, whole wheat flour, baking powder, and water! A recipe for regular pizza dough that I found said also to add oil, salt, etc but I didn’t feel like it 😛
Here’s my version:
Oatmeal Pizza Dough [no yeast required!]
Makes 1 thin crust pizza
0.25 cup whole wheat flour
0.25 cup quick oats
1 tsp baking powder
0.25 cup water
1 tsp vegetable oil [if desired]
Preheat oven to 400 F. Mix all ingredients together and bake 10-15 minutes.
The center of the pie was quite doughy, and the crust was a little tougher. It didn’t really taste like the pizza crust you get at restaurants [maybe due to lack of oil?], but rather more like stiff flatbread/tortilla.
The sauteed toppings: onions, chickpeas, tofu, orange peppers, parmesan cheese
Sauce was Classico Tomato & Basil sauce. I don’t have normal “pizza sauce”, so I figured pasta sauce works too 😀
Oh and check out my exciting lunch today!
I opted to make bean balls this morning [out of adzuki beans and green lentils] this morning instead of going for a run 😛 They tasted great–slightly crunchy because I baked them a little too long, but had just the right amount of seasoning–and it didn’t take much! Just 2 tsp soy sauce and 1 tsp pasta sauce, the rest of the flavor were all beans.
For fun factor, I used about 2 tablespoons quick oats in the batter–not sure what difference it made though! 😛
The white stuff to the left of the bean balls is a cucumber-yogurt sauce–chopped cucumbers, plain yogurt, and lemon juice–a little bit of yogurt really goes a long way! It tasted almost like mayonnaise.
And to finish off my adventurous tortilla, a random raw kale leaf 😛 I don’t really have a lot of things in my fridge to stuff wraps with!

Check out the creaminess!
I think cottage cheese works way better than milk! 😀 Also, mashing the blackberries into the oats really enhances the flavor of the cottage cheese in the oatmeal 😀
I actually had the same thing on Friday, but my camera ran out of batteries that morning so there was no picture 😛 But on Friday I also didn’t cook the beans properly so it was very unpleasant to eat!
Anyway, the beans didn’t really lend any taste to the oatmeal–just extra chew! It felt like I was chewing walnuts, actually 😀
Along with a cup of mocha–no sugar this morning–still tasted great! 😀
Experiment #20: pumpkin May 15, 2008Posted by oatmeal in Breakfast, Dinner, Lunch.
Tags: beans, brownies, corn, pumpkin
I finally tried the pumpkin-oatmeal combo on Monday:
The oatmeal looks like mashed potatoes ’cause I was in a hurry to get to the lab [at 7 a.m.! Hence the reason I packed my breakfast in a box~] so I microwaved :p Ended up not adding a lot of water–it was enough, but less than the amount I usually add.
But yeah–chocolate & pumpkin definitely go well together! The pumpkin has a very refreshing taste and took my attention away the slightly out-of-place flavor of the black beans [I ditched the chickpeas–much better!]–guess bean brownies take a bit of getting used to 😛 And notice that I have corn with my oatmeal again! I’m addicted~
I ended up eating the apple after I ate my oatmeal breakfast…and started snacking on the tomatoes & carrots at 10 to 10: 30 ish~since the tortilla obviously wouldn’t be enough to get me through til dinner time [I didn’t have time to pack a snack! :(], I rushed home for about 2 minutes to grab a mug of coffee to bring to the lab~guess I need to pack a lot more next time!
Got home that day at around6: 30 p.m.–that’s 11.5 hours in a place with no windows! Was rather tired and grumpy at that point, but then mom made soup:
It was GOOD. Don’t remember what else I had for dinner that day ’cause didn’t take pictures 😛
Experiment #19: Corny – Part II May 13, 2008Posted by oatmeal in Breakfast.
Tags: apples, beans, brownies, corn
Had this the day before yesterday:
For the beans, I used chickpeas and black beans ’cause I wanted to see what the brownies would taste like with other types of beans…the results weren’t so good with the chickpeas 😦 Its savory-ness clashed horribly with the sweetness of the brown sugar&applesauce…I threw in a tiny bit of vanilla extract in hopes of masking the flavor of the chickpeas…the brownies were still good…just tasted a little odd~I think kidney beans would have worked better…they have a less distinct taste~
But yeah! I’m really liking the corn with the oatmeal–the flavors actually go together quite well–it’s kinda like eating rice, really~so good! Having it with nuts or PB may be even better
