Oatmeal #133: Pomegranate December 13, 2009

Haven’t had overnight oats in ages! Decided to have some after buying some pomegranate–another thing which I haven’t had in ages. The first time I ever had it was in grade six and then I haven’t eaten it since because 1. doesn’t seem to be in BC grocery stores 2. prep work! Nooooooo! 3. see reason #2.

But after seeing pomegranates repeatedly being thrown in my face by the grocery store’s weekly flyers for 2 weeks, I finally caved and bought one. Plus I needed some excitement in my life–because try as I may, studying for exams just isn’t exciting enough.

Night before:
0.5 cup oats, 1 tbsp flax, 2 tbsp wheat bran
0.5 cup homemade yogurt [didn’t do it right–too watery!]
2 tbsp store bought plain yogurt, 2 tbsp milk, 2 tbsp water
chocolate powder, ground ginger, cinnamon

Day of:
~0.25 cup pomegranate seeds
8 blackberries

I was going to add nuts too–but I forgot!

On a side note, I love clear bowls! I just wish I had a glass table too because taking those shots were a pain in the #!$#!$.

Oh, and yesterday I finally created an oatmeal page! I really think you guys should check it out. Because it is colorful and awesome.

Physiology exam tomorrow during some time in the morning at somewhere on campus!
1 week and 1 day til I get to go home!

Wow, I’m really bad at updating this–I don’t know how the three-times-a-day bloggers do it!


Oatmeal #82: Bean Brownie Oatmeal

I made black bean brownies before and thought they were pretty good–if the right amount of sugar was added–and so this was born!

I was a little scared that it would taste bitter again, since the only “sugar” I added was half a banana–but it turned out to be enough! [I used black beans and adzuki beans, by the way]

And this mess was dinner:


Grrr I meant to make a frittatatatata–not ground-pork-like  substance! Too much veggies, not enough egg! 😦

The rice was good though 😀 I flavored it with rice vinegar and some Japanese rice seasoning.




Well I thought that I was going running yesterday so I made this…I should have known better! Didn’t wake up til 6: 05 a.m. so there was no time for my morning run…not unless I wanted to rush afterwards…so I didn’t go…-sigh-

Anyway, I threw together some goji berries, blackberries, and corn muesli on Sunday night, stuck it in the fridge, and it was good 😀 The blackberries got all mushy though–probably ’cause they were frozen.

Well–off to run in about 1 hour 15 minutes!

Oatmeal #81: Berry Crumble August 2, 2008

The most exciting part about this breakfast is: no baking required!

Great texture! The perfect blend of chewiness and crunchiness. After the first bite I was so tempted to salute the microwave for a job well done! Oh. My. God.


Here’s the recipe–because goodness like this needs to be shared!

Makes 1 serving

0.25 cup oats [I used quick oats]
1 tbsp of the omnipresent Kellogg’s All-Bran cereal
1 tbsp chopped walnuts
0.25 tsp cinnamon
2 tsp jam/honey/maple syrup

1 tsp whole wheat flour
0.25 cup blueberries
0.25 cup raspberries
0.25 cup blackberries
1 tbsp + 2 tsp goji berries, soaked in water for about 10 minutes

1. Mix the first 5 ingredients in a microwave-safe bowl and heat for 1 minute.
2. In the mean time, mix the remaining ingredients together in another microwave-safe bowl [or right on the plate you’re going to eat from, like I did 😛 ], and stick that in the microwave for 40-60 seconds.
3. Combine the ingredients on a plate and eat! Serve with a dollop of plain yogurt if you like.

You will definitely see more of this dish in the future! I want to have it for dinner now…

Anywhoo, here’s yesterday’s pre-yoga snack:


Plum, yogurt, chocolate corn cookie/thing. Pretty straightforward.

Yesterday’s dinner:


Now that I look at it, that was the smallest dinner ever!

Anyway, up there I’ve got a broken up piece of lemon tilapia sitting on a bed of pasta, half a slice of cheddar cheese, green lentils, celery, and frozen mixed veggies.

Off for yoga-ing!

I think cottage cheese works way better than milk! 😀 Also, mashing the blackberries into the oats really enhances the flavor of the cottage cheese in the oatmeal 😀

I actually had the same thing on Friday, but my camera ran out of batteries that morning so there was no picture 😛 But on Friday I also didn’t cook the beans properly so it was very unpleasant to eat!

Anyway, the beans didn’t really lend any taste to the oatmeal–just extra chew! It felt like I was chewing walnuts, actually 😀


Along with a cup of mocha–no sugar this morning–still tasted great! 😀

Oatmeal #67: Baked Blackberry Yogurt Pancakes July 15, 2008

I really like pancakes! [recipe]


The only thing missing was maple syrup–but with the banana, I didn’t miss it too much 😀 [I ended up mashing them–much easier to eat that way 😛 ] The yogurt gave the pancake a very distinct taste and smell–it was very yummy! They were also soft and doughy–just the way I like them 😀

I had a piece of my spiced flax bread before this ’cause I thought I was going to either go running or do yoga or something…but turns out the only way I’d exercise on 5 hours of sleep is with coffee and a real breakfast…so I made the pancakes. [I hate it when I have sleep problems! 😦 ]

Unfortunately, I was craving a nice bowl of stovetop oats the whole entire day since I didn’t have it for breakfast! That always happens whenever I change up my breakfast–it’s like I’ve got this psychological dependence going on!

Tried something new for my post-run snack:


Cottage cheese with blueberries! I quite like the combo of sweet and salty–I’m definitely hooked! Can’t wait to try out more combos!

I also had about two teaspoons of peanut butter and a nectarine–but I didn’t bother photographing them 😛

Lunch was quite small, but I was low on food and didn’t know what to pack!


Thank god for my baking! I packed 2 egg muffins, 3 cucumber slices, and a random combo of tuna, green lentils, pearl barley, raisins, and ketchup–tastes better than it sounds 😀 Also had a cup of banana rice milk with 2 teaspoons of wheat germ thrown in.

I was really hungry all day today 😦 Not getting enough sleep always throws me off–and I had no snacks at the lab to get me through…but luckily the work kinda distracted me a little…



I have no more peppers! I feel so lost…should probably go to the grocery store again…since I’m almost out of mushrooms…which means tomorrow and Thursday’s dinner will be absolutely pitiful…noooo I hate running out of food!

And now I’m debating whether to have pancakes again tomorrow or make oatmeal…maybe I should stagger my pancake-ing a little, my oatmeal craving was pretty bad today 😦

Tuesday’s breakfast:

Again–blurry picture–sorry! I think I’m just going to go back to using the flash…
This bowl of oats contain:

  • usual amount of oats, water, milk, yogurt, wheat germ, and sunflower seeds
  • 0.2 cup goji berries
  • 1 kiwi
  • 2 blackberries [or more? Can’t remember]

Dinner was some more pasta salad! Tasted just as good without the parmesan [or maybe my tastebuds are just so insensitive that I don’t sense any difference 😛 ]

With mushrooms, zucchini, carrots, peas, brussel sprouts, soy nuts, and a tablespoon of extra virgin olive oil. And that’s water in the starbucks cup 😀

Just a short post for now–because I am going for a run! I’ve build up to a 25 minute session now, with a 15-20 min walk home as a cool-down thing–I feel so energized [and hungry] after every run–it’s quite awesome! [even though it’s still really hard to get myself out the door sometimes 😛 ]

Oatmeal #45: Berries again June 18, 2008

Monday’s breakfast.
Not that exciting, but I think I need a break from excitement so that I can try and cure my allergies. At this point I’m willing to try just about anything to get rid of it–it’s keeping me from getting a good night’s sleep! 😡 I’m dying over here!

I think I like raspberries more than blackberries–they aren’t as sour! Although I think both are kinda ugly looking 😛

Post run snack:

blackberries, wheat germ, all-bran, milk

Cereals make the perfect snack! Actually, cereals are great any time of the day, as proven by the breakfast challenge! :mrgreen: I’m really tempted to do it again ’cause it was so much fun!

The tower of lunch!

Packed lunch ’cause had to be at the lab! It seems like I’m at the lab all the time now…weird! I wonder how long it will take before I start going bonkers…I’ve been at the lab every single day for a couple of months now… 😛

Top container: plain yogurt w, jam, frozen blueberries [yummeh!]
Bottom left: strawberries, gala apple
Bottom right: potatoes, frozen veggies, parmesan cheese, sunflower seeds

I love how strawberries just fills me right up! Although I get hungry again really quickly afterwards…I either have really speedy metabolism or I’m not eating enough…I’m always hungry!

And I had curry again for dinner! [FYI: not real curry, because I’d explode–I get the instant kind :D]

Oatmeal #44: Berries June 17, 2008

Heh, I’ve used up all of my kiwi, so there’s no more experimenting with those until they go on sale again! :mrgreen:

Oh, and I was so excited about posting my last kiwi experiment yesterday that I skipped ahead! So I’m rewinding back to Friday for a minute:

raspberries, blackberries, wheat germ, milk, peanuts

I only threw them together ’cause I thought it would look cool :mrgreen: Two different colored berries with almost identical shape! How magical is that?! [yes, that’s how most of my oatmeal combos are born–make it look pretty first, worry about taste later! 😀 It’s a good thing I have an adventurous taste in food!]

Saturday’s lunch:

In the small bowl: strawberries
On the plate: rye bread toast with a slice of cheddar cheese
In the bigger bowl: scrambled eggs with pumpkin, rye bread, carrots, and parmesan cheese

It was really exciting ’cause I’ve been wanting to try the pumpkin-egg combo in ages! And might I just add that I love cooking bread with eggs ’cause it gives the bread extra flavor and extra crunch! With the addition of the pumpkin, the bread had a slightly sweet taste–which made it seem like I was eating dessert rather than lunch 😀

And dinner was the same as what I had on Friday–curry!

This morning, I did some baking:

Vegan cornbread!!!!

I’ve been dying to try this in ages, only I’ve never had a bag of cornmeal at my disposal before so I never did! But thanks to the Breakfast Challenge, I lugged a bag of the stuff home and thus I have cornbread!

It’s kinda sweet, even though I only added 1.33 tbsp of sugar…good thing I didn’t add more! My version was kinda chewy and had similar texture to that of a scone–an added bonus ’cause I love scones!

Can’t wait to have this for lunch today–that is…if I can resist snagging another bite of it!

Breakfast Challenge: Last Day! June 5, 2008

Breakfast in the Philippines and PB & B

strawberry&banana “champorado”, peanut butter & banana

Made some adjustments to the chocolate rice ’cause I have no sweet rice–just regular rice. And I wanted colors!–hence the fruits :mrgreen: I was so excited to have this ’cause I haven’t eaten this in ages–even though it doesn’t taste the same–chocolate is chocolate! 😀

Now I know how to make chocolate milk!

Went for a run about an hour and a half after my breakfast [plus some peanut butter :-P] Wasn’t as energized as I would have liked…I think it may have been the peanut butter…or maybe just my motivation problems~but at least I got through it 😀

Baked beans over rye bread toast

Before lunch, I did some baking!

coffee granola!

I only added half a teaspoon of coffee powder for 1 cup of granola–couldn’t really taste the coffee, but smells like it 😀 Although I should have baked them longer than 17 minutes next time…either that or turn up the heat on the oven :\

Polenta & potato scone cereal

I broke up two potato scones and ate it as cereal because I can :mrgreen: I liked it, of course! But needed more than 1/4 cup of milk, that’s for sure.

I also cut up the polenta I made yesterday and ate it as “cake”–with yogurt & cherry-blueberry jam filling! Made for messy eating, and the flavor was a little plainer than expected…so next time I’m just going to just chop up the polenta and throw it in a giant pool of yogurt 😀

Soup & Instant Cereal

Blueberry-blackberry “soup” topped with some of the coffee granola I made before lunch. Wasn’t too sweet at all–it would have made a great dessert–but I couldn’t wait that long so it became entree :mrgreen:

And so for “dessert”: instant cereal packet [with lots of water added–’cause it’s always too sweet] with chopped apples thrown in.

Soup’s done!

And so is the breakfast challenge! 😦

It’s been fun, sugary, and peanut-buttery. 😀 This is definitely going to become a tradition! And shoutout to Jenn for doing this challenge with me! Now if I can convert some of my offline friends to breakfast-ism…

Mocha berries

Strawberries, blueberries, blackberries, sugar, coffee powder, cocoa, 1% milk

Three different kinds of berries! How exciting is that? Sad news is that I used up the last of my strawberries 😦 Have to wait til Friday til I can see what type of fruits I can get for sale price!

Anyway~coffee & chocolate & fruits definitely go together! And the berries look so bright & colorful against the chocolae-coffee oatmeal!
Couldn’t stop staring that that very blue blueberry!

Forgot to add the walnuts when the first picture was taken 😛

Italian breakfast

I made polenta! Was so excited for this ’cause I went on a 1 hour 20 minute walk [back and forth :D] for a bag of cornmeal just so I could experience the wonders of polenta :mrgreen:

After 40 minutes of hardcore stirring!

Not sure how much water to add so I kept adding the water til 40 minutes was over :mrgreen: Guess now that I’ve had the full polenta experience, I can just use the low heat trick from now on!

Apparently Austrians eat polenta for breakfast too!

Polenta with milk, apples, and a little bit of sugar. Plus 2 potato scones [I went for seconds 😀 ] with plain yogurt & jam!

Pain au chocolat & pumpkin pie rice

Finished the day off with my own version of the french chocolate sandwich–using banana and cocoa powder, spread over a piece of toasted rye bread [they were on sale]! Was too lazy to get a new spoon to scoop the cocoa powder with so I made a mess 😛

Had my meal with a cup of Bolthouse Farms vanilla chai drink mixed with water.

The pumpkin pie rice [topped with all-bran & soy nuts as the “crust”] wasn’t as sweet as I hoped…so I threw in the bananas left over from the chocolate bread 😀 Was a very filling meal! Although I think I’m going to take a short hiatus from pumpkin for a while!

Tomorrow’s the last day of the challenge! Can’t believe it’s almost over already–the five days are just flying by!
