Oh what is this, an update 2 days in a row?
Look what I made 2 days ago!
My first loaf of bread everrrr!
This is actually my second attempt at bread baking, but the first time I baked sweet potato buns!
I’m so glad I decided to buy yeast at the grocery store–I think I have enough yeast to last me through the year, which means I never have to buy bread again! And I get to procrastinate bake some more!
This loaf turned out crunchy on the outside, and chewy and soft on the inside. And the smell was nutty and sweet! Too bad I didn’t have a bread pan, because otherwise this could have been sandwich bread!
Whole Wheat Oatmeal Bread
makes 12 thick slices
1 packet sweet & low [or 2 tsp sweetener of choice]
1.75 cup lukewarm water
1 tsp instant yeast
3 cups ww flour
0.75 cup quick oats [or ground rolled oats/oat flour]
0.25 cup flax
0.25 cup wheat germ
0.25 tsp salt
Mix everything together until it forms a dough.
Let sit for about 2 hours.
Fold the dough and let it sit for another hour.
Fold again. Wait another hour.
If you haven’t already, transfer the dough to a baking pan or pour it into a bread pan.
Shape the dough to your liking.
Sprinkle some oats or seeds on top of the loaf if you like. Might be helpful to brush a bit of eggs or water on top to help the toppings stick [I didn’t do that, but I should have!]
Let the dough sit another hour.
Preheat oven to 350F.
Bake for 30-40 minutes.

Can’t believe it took me this long to try this! I’ve been wanting to make this for a really long time, but:
1. Didn’t want to wait for the microwave
2. Didn’t want to wash the bowl I mix the batter in and the plate
But I was out of fruits that day, so I had to suck it up 😛
- pumpkin, cinnamon, ground ginger, flax, milk, greek yogurt, walnuts
I got a billion things I haven’t done…including the commerce assignment that’s due today. D: I also have a stats final on Monday, Chem lab report, Bio lab report and quiz next Thursday, then another Commerce assignment due the day after?!
I’m going to need a lot of oatmeal [preferably infused with caffeine and brain cells] to get me through the next 1 month and 11 day.
On a fun note, I destroyed a piece of chem lab equipment yesterday morning! I feel so powerful…like Mohiner Suresh from Heroes…except without the scary part 😀

It’s just a hole in the middle of an english muffin 😀

It was quite tricky to eat out of 😛
But it’s fun to look at! 😀
Broccoli, spinach, chickpeas, kidney beans, brown rice, rice vinegar, and rice seasoning. I think I also had an egg to go with this–but I forgot about it until the end!
Question: When you use the weight machines at the gym–what do you guys normally use? I started playing around with weights on Sunday and it was fun! So gimme some tips, yo 😀

Haven’t made these in a while! That’s ’cause I’ve been too lazy to watch the additional bowl that you need to mix the batter with 😛
- 0.5 cup quick oats
- 1 tbsp flax
- max 0.25 cup milk
- max 0.25 cup water
- 1 plum
- way more baking powder than was necessary [my hand slipped 😛 ]
I let my batter sit overnight in the fridge–that’s why I added so much fluids–the flax and oats soak up liquids really well! I could have made scones from the batter :-p Anywhoo–this was heated in the microwave for…2 minutes? That seems to be the magic number!
And topped with a generous spoonful of peanut butter. I wanted to add it in the batter, but I was afraid that I wouldn’t be able to taste it, so I didn’t 😀
- whole wheat pasta, green lentils, corn, red & green peppers, kidney beans, chickpeas, peas
- seasoning: chili powder, pepper, EVOO, parmesan, lemon juice, rice vinegar
- Paula apple, vanilla yogurt
I didn’t actually have time to eat the whole thing at once so it got split into two parts–with the apple as my snack!
My blog entries are going to be more sporadic from now on since orgo and genetics are killing me and with midterms coming up I don’t have time to come up with new concoctions as often!
I’ll still try and post whenever I can though! [Namely, when I’m procrastinating…so maybe my entries wouldn’t be that sporadic… 😛 ]

Before I start–RANT time: I spent 1.5 hours yesterday scrubbing the walls & doors of my room With. A. Toothbrush. for my crazy landlord–and I think I’m going to have to do it AGAIN today [including vacuuming again, scrubbing the floor boards and windows–toothbrush style! 👿 ] because I swear her glasses are like cleverly disguised MICROSCOPES. House inspections are such a nightmare because she picks on the tiniest detail. [she has to inspect my room ’cause I’m moving out of the house…]
“Oh em gee there’s a dot on the wall you didn’t clean! I am unhappy!” 😡
I’m going to procrastinate on the cleaning by moving on with this entry!
Yesterday [Aug 9]
ROFL. I had leftover vermicelli–so I decided to finish it 😀 LOVE this stuff–always fills me up!
I ended up breaking the tortilla [used half of one] up and stuffing the raw tomatoes in the pieces–kinda like mini-wraps!
Took a break from packing for dessert! I still had half a tortilla left so I decided to toast it and throw it on top of chopped plum & raspberries. Nice and crunchy! Would make a great snack if stressed for time–although I wouldn’t recommend packing this, ’cause the tortillas would end up soggy and it wouldn’t be a crisp anymore! [but I’m sure it’d still taste good 😀 ]

Oatmeal Challenge: Dips
I was so excited for this lunch all week because it’s my celebratory lunch for last day at work!
Things to be dipped include one toasted tortilla and some carrots. I discovered that if you toast the tortillas enough–you get crackers! I was so exhilarated when I found out it was almost embarrassing….
For the dip: 0.5 cup ground quick oats [by hand–too lazy to bust out the coffee grinder and clean it!], 0.5 mashed banana, flax, water, yogurt [not much though…I think I had 1 tbsp left in the tub at most?], walnuts, and vanilla. I made it in the morning and threw it in the fridge, so it’s kinda like a muesli dip. 😀 The consistency was very dip-like! Tasted like cookie batter!
Not the most filling lunch though…needed more veggies, but I didn’t have much left in the fridge and didn’t want to buy any more ’cause I was going home in a few days…
Thursday [Aug 7]
I present to you–my new favorite snack/lunch/way to eat everything:
Tortilla wrapped around a baby carrot and–the star ingredient–jam. It’s sweet, it’s crunchy, it’s chewy! Perfectly transportable and quick to whip up. Can be eaten at any meal!
I love it when I have to finish amounts of food in a given period of time because crazy stuff like this gets discovered
Of course, that wasn’t the only thing I had for lunch:
A salad of sorts–mixed veggies, raw cucumbers, raisins, ketchup , lentils, peas, corn.

My first ever attempt at microwave eggs–check out that mess! The explosion in my microwave was exciting, but annoying to clean up!
Other stuff in the wrap–carrots & ketchup, raisins, adzuki beans, cheese, and my spoon. [yes, my stomach acids are that rockin’]
Tuesday [Aug 5]
Black bean hummus! No tahini ’cause I’m too cool for that 😀
And instead of cucumbers, I had zucchinis! Thought that was an awesome change–squash lovin’!
Other stuff include: peas [microwaved with zucchinis], raisins, all-bran, ketchup. Dee-lii-shus!
And the Tortilla-thon 2008 ends! Well…I still have one tortilla left, but I’m doing boring stuff with it so it gets embedded in another post instead!
I’m also going home tonight! Omgawd lyke so totally exciting lyke whooa!!

Breakfast from Tuesday:
I’m not sure why I decided to microwave the batter..maybe ’cause I was too lazy to clean the baking mat?
Anywhoo, pancake batter contents: zucchini [obviously], unsweetened coconut, cinnamon [I think?], flax, milk, oats. With banana-yogurt topping and walnuts! Coconuts in pancakes = #1! The zucchini was also a fun addition–green pancakes! What could be more fun than that?
Oh, and I should note that the microwave isn’t really the best pancake making tool…at least…for my type of batter it isn’t. Pieces were falling off when I attempted to lift the pancake…but thanks to the magic of overnight oatmeal + flax action, everything turned out alright 😀 Great option for when you’re in a hurry though!
I was almost out of yogurt! And I wanted to stretch this container til the end of the week, so instead of banana yogurt, I had some form of banana yogurt soup: 0.5 banana, 0.5 – 1 tbsp plain yogurt, splash of rice milk & coffee–delicious, but was gone in a second!
With the soup, I had a mocha-cino muffin top–baked on Sunday! First time I’ve ever made anything muffiny 😀
Tons of raw veggies and rice that was cooked in the morning, so all I had to do when I came home was mix everything together! [Well…I had to microwave the frozen vegetables, but that takes 1 minute…] I need to have salads more often 😀
Off to run in about 10 minutes!

Like risotto [oatmeal-sotto?]…but extra chewy!
Words cannot convey to you how heavenly this was! I love how oatmeal tastes good no matter what you do to it! It tasted so creamy, and every bite was full of flavor!
I noticed that while cooking, the oats and the water it was cooked in [before adding broth] was a slightly darker color, which I suspect has something to do with the sauteed onions and garlic that was in the pot–so pretty! And the smell was A-MAZING.
Stuff I had:
- 0.5 cup oats
- 0.5 cup water
- 0.5 cup chicken broth
- 1 tbsp flax
- 0.25 small onion, chopped
- 2 cloves garlic, minced
- 0.5 yellow pepper
- 1 slice soft tofu
- frozen broccoli, cauliflower, carrot mix
- 2 tsp parmesan, sprinkled on at the end
So this was my first ever “risotto”–can’t wait to cook it again the normal way!
Ooh, and check out the normal lunch I had today and yesterday!
Pasta salad! I created a dressing out of equal parts extra virgin olive oil, ketchup, and rice vinegar, and seasoned with oregano–super good! I should eat like a normal person more often 😀

Haven’t been feeling very adventurous lately…and my fridge was rather empty, so it’s just been nice, classic comboes for the past few days 😀
Made with cottage cheese, served with cinnamon gree tea [added the cinnamon in–but didn’t really change the flavor much!]
Cinnamon Coconut Oatmeal Pancake
I tried a new pancake topping instead of the usual banana! The last few scoops of blueberry-cherry jam and walnuts–super yum!
Blueberry, Corn, Longans Oatmeal
Again made with cottage cheese 😀 That stuff is just magical when cooked with oats! Had a cup of coffee on the side.
Beans for Breakfast
Sweet bean soup again! Added some rice this time ’cause I was low on pearl barley and black-eyed peas! I added more water this time, and so ended up with a lot more of the soup 😀 Happiness!
I had a cup of coffee with this breakfast–it’s quickly becoming a habit! Not sure if this is good or bad…
Yesterday was snack day for me!
One black corn oat chunk, one sliced up Golden Delicious apple, and one heaping spoonful of peanut butter! PB + fruits = amazing.
Was going out for dinner with my housemate at 6: 15, which mean I was having dinner at least 1.5 hours later than usual, so I cut up some raw yellow peppers for a snack after lab:
Dinner was yet another contribution to pizza week! We went to Wooden Heads–a gourmet pizza place–unfortunately I only sat down for about 15 minutes because I had to be back at the lab! The next half hour was possibly the hungriest half hour ever 😦 Luckily my lab-mate was nice and I got to leave 10 minutes early 😀
My pizza was called Arrogosta–curried lobster veloute [a French sauce], grilled red onions [I’m really developing a taste for onions these days–weird!], mushrooms, and smoked salmon! It was SO. SO. GOOD. Smoked salmon is amazing! The sauce was amazing! And it was about $14 plus tax and whatnot–not bad at all!
Oh, and thank you Jenn for nominating me! I always knew I was awesome, but it’s nice to hear it from someone else
I’m supposed to nominate two more, but there are too many blogs! Can’t choose! Plus I’m also lazy, so I’m stopping at 5 😛

I think cottage cheese works way better than milk! 😀 Also, mashing the blackberries into the oats really enhances the flavor of the cottage cheese in the oatmeal 😀
I actually had the same thing on Friday, but my camera ran out of batteries that morning so there was no picture 😛 But on Friday I also didn’t cook the beans properly so it was very unpleasant to eat!
Anyway, the beans didn’t really lend any taste to the oatmeal–just extra chew! It felt like I was chewing walnuts, actually 😀
Along with a cup of mocha–no sugar this morning–still tasted great! 😀

Had pancakes again yesterday!
I bought a small-ish bag of unsweetened shredded coconut and decided to try it out…unfortunately, I couldn’t really taste it at all! Couldn’t even smell it! 😦 Maybe I added too little? I only put a tbsp in…the cinnamon was too overpowering. However, I definitely felt it when I was chewing, so yay? 😛 It’s been a really long time since I had the stuff…but I wasn’t expecting it to be so…flavorless?
I had it with a cup of mocha. I’ve finally decided to give chocolate coffee a try! All I did was add a teaspoon of unsweetened cocoa to my instant coffee mix and added half a cup of soy milk–tasted really great! It was like caffeinated chocolate milk 😀
Lunch was the same dealio as yesterday, so no pictures 😀
I made some awesome dessert/snack stuff on Friday morning:
Sweet bean soup! [it’s a pretty popular Chinese dessert 😀 ] Made it with red beans, black-eyed peas, and pearl barley–just like my mom did! I added raw sugar…but I think she used something else. It was really good 😀 I had about half a cup of this for snack yesterday.
Happiest dinner ever!
Raw orange pepper stuffed with green lentils, chickpeas, onions, and parmesan cheese. Microwaved frozen veggies on the side! I also had a bowl of soup, which contained the excess of what was supposed to go in the pepper 😀 I guess I overestimated how much half a pepper could hold! But I’m glad I had the soup! It smelled really good, could have used some salt [or more broth] though.
Chickpea Lentil Soup
- 1/4 cup chickpeas
- 1/4 of a medium white onion
- 2 tbsp green lentils, pre-soaked [keep the liquid]
- 2 tbsp broth
- 1.25 cup water
- salt, to taste [or more broth] – optional
Boil the onions and water over medium high heat, then add the lentils [and the liquid it was soaked in]. Cook til mixture bubbles again. Add chickpeas, broth, and salt. When the soup starts boiling, turn heat off.
