Double post today to speed things along so I can move onto this week!

  • 0.25 cup oats
  • 0.25 cup cooked brown rice
  • 0.75 cup water
  • 0.25 cup milk
  • 1 slice cheddar cheese
  • 0.5 cup spinach
  • 0.25 tsp oregano
  • 1 tsp parmesan or salt or 0.125 of a bouillon cube << otherwise there’s no flavor!
  • 1 tbsp flax
  • 1 tbsp walnuts

Mix everything together. Microwave [or cook on stovetop if you’re not lazy ๐Ÿ˜€ ] for 2 minutes–ADD LOTS OF WATER–because I didn’t and explosion occurred. It was trรจs sad.

Need to put more veggies next time! ‘Cause I was not full on this thing~maybe get a bigger bowl or something, ’cause I’m capable of eating epic proportions of vegetables ๐Ÿ˜›

Dinner:

Clockwise from top left: pear, container of broccoli, spinach, chickpeas, and kidney beans in boiling water [lazy way of cooking vegetables ๐Ÿ˜› ], whole wheat english muffin with hummus, hard-boiled egg.

I needed a break from sweet oats, so savory oats it was!

  • oats, flax, walnuts, Kellogg’s all-bran cereal
  • 1 tsp parmesan
  • 0.25 chicken bouillon cube [wayyy too much]
  • 1 tsp extra virgin olive oil
  • milk
  • ~1.5 slice turkey
  • 1 cup English Breakfast tea

I was full to the max after this–which is awesome because I don’t have that much snacks lying around to eat!

The English Breakfast tea, according to what the packet said, is a blend of North Indian, Kenyan, and “other choice teas”…not sure what that means but I’ve never heard of any of these teas so who cares! ๐Ÿ˜€ It doesn’t taste much different from any other tea I’ve tried though–maybe I’m just not experienced enough to know the difference ๐Ÿ˜›

Oh, and I restocked my stash again yesterday ’cause I was worried that I wouldn’t have enough to last til December!

I now have a whole row in my pantry dedicated to oatmeal  It is glorious.

And finally:

For some reason I was really sleepy in class yesterday…so I was even more distracted than usual…it’s a wonder I actually have these bio notes to photograph!

Like risotto [oatmeal-sotto?]…but extra chewy!

Words cannot convey to you how heavenly this was! I love how oatmeal tastes good no matter what you do to it! It tasted so creamy, and every bite was full of flavor!

I noticed that while cooking, the oats and the water it was cooked in [before adding broth] was a slightly darker color, which I suspect has something to do with the sauteed onions and garlic that was in the pot–so pretty! And the smell was A-MAZING.

Stuff I had:

  • 0.5 cup oats
  • 0.5 cup water
  • 0.5 cup chicken broth
  • 1 tbsp flax
  • 0.25 small onion, chopped
  • 2 cloves garlic, minced
  • 0.5 yellow pepper
  • 1 slice soft tofu
  • frozen broccoli, cauliflower, carrot mix
  • 2 tsp parmesan, sprinkled on at the end

So this was my first ever “risotto”–can’t wait to cook it again the normal way!

Ooh, and check out the normal lunch I had today and yesterday!

Pasta salad! I created a dressing out of equal parts extra virgin olive oil, ketchup, and rice vinegar, and seasoned with oregano–super good! I should eat like a normal person more often ๐Ÿ˜€
