This is what I do when I have to stay up all night:
Baking, cooking things, and trying not to set off fire alarms!
I’m a volunteer for the Campus Observation Room this year and I had an on-call shift from 12 – 4 a.m. on Saturday night, so instead of using this extra time to study, I dirty up the kitchen counter!
This is my second attempt at sweet potato bread, and I used a modified version of my Oatmeal Bread recipe, subbing sweet potatoes for the wheat germ and flax!
Spiced Sweet Potato Bread – 12 slices
1 packet or 1 tsp sweetener of choice [I used Sweet&Low]
1.5 cup lukewarm water
1.0 tsp instant yeast
3 cups ww flour
0.75 cup quick oats
1 medium sweet potato, mashed
0.25 tsp salt
1 tsp ground ginger [I used 0.75 tsp–but the flavor doesn’t show up much with this amount!]
1 tbsp flax for sprinkling
About half an hour before, microwave or cook the sweet potato. I nuked it for 4 minutes, then cubed it.
Once the potato has cooled, mix all ingredients together, except the flax.
Let sit for 1 hour.
Fold dough after 1 hour.
Shape dough and put into bread pan or baking pan. Brush top of the dough with water or milk and sprinkle flax on top.
Let sit for 3-4 hours. [I let it sit for 2 hours, but the addition of sweet potatoes seem to slow the yeast down, so I’d recommend letting it sit longer]
Preheat oven to 350F.
Bake 20-30 minutes.
Yay! I actually got more servings this time because I waited longer before baking. Next time I’m going to wait even longer before popping into the oven!
The bread was slightly sweet and has a chewy center, and crunchy crust! Definitely a bread that tastes good after a good toasting. I think next time I’m going to add more ginger, ’cause I could barely taste it.
School semester is almost over! 2 weeks left! 5 weeks and 6 days til I get to go home!

If I didn’t incorporate the yam dessert from the previous night into my breakfast, I would have ended up chugging down a ton of it anyway, so I decided to have that stuff with my oats 😀
Disappointingly, the yams didn’t really bulk up the oats too much–but it could have been due to the fact that I had 0.25 cup oats and 0.25 cup mixed grains&other stuff [wheat berries, spelt berries [?], oats, wild&white&brown rice, millet, pearl barley, red&green beans..possibly some other stuff as well] instead of the usual 0.5 cup oats..
But it tasted so good! I mashed some yams into the oatmeal, and left some chunks on top for all-around yamminess 😀
Had some random leftover fruits lying around in the fridge, so I took it upon myself to finish them!
A huge plum [mashed], cherries, and blueberries. Topped with sliced almonds and walnuts. Nice and normal 😀 I also mixed in two tablespoons of the cooked grains in with 0.5 cup oats that time–much better!
Can’t remember if I ran or yoga-ed that day…or I might not have done anything…
Blueberries and a surprise raisin bun! [It’s a surprise ’cause the raisins were hidden inside the bun! So I didn’t even know til I bit into it!]
Am off to read about the whole tie breaker dealio with the women’s gymnastics last night! [I’m still happy for China though!]

Got this idea while making corn muffins with mom two days ago!
Some of you were a little skeptical about the blueberries with sweet potatoes, but I found the tastes complement each other quite well and wasn’t weird at all! I mean, it sounds really weird but I loved it 😛 And so pretty! I like colors 😀
Aaaand I’m finally finished with the last of my swee potato! This time I cooked them long enough so that they were soft–they tasted so much better than the rocks I had last time! Now I’m really tempted to go buy another one so I can have it again!
Oh, and mom made the best dessert two days ago:
Contains beans, barley, and rice! I’ve never had this with rice before–but it was the best thing ever. I’m obsessed. It was so good I even ditched oatmeal to have the bean soup for breakfast instead yesterday:
And the funny thing is, I used to hate this bean stuff! We’re down to the last bowl now–I’m so sad 😦
Oh oh–and tomorrow I’m taking my mom out to dinner for Mother’s day! Must remember to bring my camera so I can get some pictures of the food! What are you guys doing for Mother’s Day?

I bought a sweet potato the week before and still haven’t used it [I wanted to save it for something…but I have no idea what that “something” was..] so I decided to have it with breakfast this morning:
I should definitely add more sugar next time…and maybe boil the potatoes longer so it’s softer~sweet potatoes just doesn’t taste right when it’s 0.75% raw. But anyway! The bowl smelled so good I spent about half an hour sniffing it before actually eating 😛
As good as it was, not enough to fill me up 😦 But I didn’t have a cup of coffee this morning, so maybe that was why I also ended up having 2[!] slices of this:
Whole wheat green tea cake. Mom baked it yesterday [I helped! :D]–we used my bag of whole wheat flour, mom was skeptical, but after she tasted it she thought it was alright! I think I’m well on my way to converting her to my whole wheat ways 😄
The cake was more moist than expected, but I like moist and doughy baked stuff so I was happy 😛
Heheh having mom around sure made meals more exciting–’cause I usually just boil stuff, add vinegar or parmesan, and eat. 😛 I took pictures of the meals~but I think I’ll probably post everything in another entry or this one’ll be too long!
